Thanksgiving Stuffings Two Ways – Low Fat & Not

With so many requests for healthy recipes during the holidays, I went to a trusted source, Dietitian Rosie Benner, for easy ways to modify a timeless side dish of the season — without compromising on taste.

For many years, Rosie developed recipes for H-E-B, now we’re lucky enough to have her working with Goodtaste. And the proof is in the stuffing! She shared three festive dressing ideas to try on Turkey Day, complete with lush low cal versions of each…

Her Granny Smith Apple & Butternut Squash is a fabulous recipe that I recommend making with whole wheat bread. Opt for Extra Virgin Olive Oil and eliminate the butter entirely for a reduced fat version that’s just as good as the original.

Rosie’s Texas Pecan & Bourbon Stuffing is made with warm, flaky cornbread and finds its kick with the addition of cayenne pepper (optional – but count me in!). This recipe also calls for olive oil and to reduce sauté heat to medium low for the duration of cooking….again if you’re counting calories this year.

Last, but certainly not least, is her Savory Bacon & Date Stuffing. Delish! Made with sweet Hawaiian bread and salty bacon.
