Just look at this radiant beet and avocado salad! The yet-to-be-named new restaurant by culinary whiz Chef Steven McHugh has its sights set on the Pearl Brewery — and is already delivering ahead of schedule with this beautiful winter salad. Take my word for it, it tastes as good as you’d imagine! Chef McHugh, formerly of Lüke San Antonio, is a supreme talent in the kitchen, but more importantly has a heart as big as gold. While his new place is being built (which he tells me will be “very seasonal, very sustainable”), he agreed to demonstrate the steps to this mix — arugula pesto drizzled over fresh ricotta cheese with roasted beets, blood-orange slices as well as bite-size avocado slices, which prove to be a nice balance of fat and acid. Sign me up for this salad!
