We’re talking terrific sauces for the Green Chicken Enchiladas (Tomatillo made from scratch) and a marvelous mole that I love. The combinations of chocolate and peppers with sesame in the latter really set the stage. The Tex Mex Enchilada is their most popular, however, with loads of melted sharp cheddar cheese over steaming tortillas and ground beef. You can’t get any more authentic than that!
