Lake Austin Spa – Beautiful Place, Delicious Food!

Print Friendly

Lake Austin Spa Resort is a secluded sanctuary that’s truly world-class – I know by experience! And it’s not just my opinion. This year the facility was named the #1 Destination Spa in North America by the readers of Conde Nast Traveler magazine. That’s a BIG deal! The spa itself is top-notch and as you can imagine, so is the cuisine. I caught up with the Executive Chef, Stéphane Beaucamp who is known for his blend of French influence with local inspiration and healthy ingredients. He gave me a quick rundown on how to create an incredibly tasty Banana Cream Pie, served chilled and topped with toasted coconut. To make it even better – it has HALF the calories of a regular slice of banana cream pie!

Enjoy the perfect piece in peace at this tranquil hideaway. Lake Austin Spa Resort is nestled on 19 lakefront acres in Central Texas’ legendary Hill Country and is located just 35 minutes from downtown Austin.

This would be for a regular sized slice…this is a very rich pie, so even a small piece is quite satisfying…and of course, would be fewer calories, etc.

It’s interesting to me that there is no cooking in the video, but the recipe instructs to cook in a double boiler. Also, the chef failed to add 1/2 cup sugar to the filling, but the recipe includes this step.

The video was slightly edited…he is cooking the mixture referred to in the recipe on a double boiler…at about 1:50 into the video he pours the eggs into a larger silver bowl that’s sitting on a double boiler. Follow his written recipe and you should be good. The pie is delicious!
