These summer days are just packed, aren’t they? With endless amounts of errands and running around to do this summer, I find that the best ways to unwind are often the simplest. Case in point: how about an easy dish…one that requires very little preparation but packs a lot of flavor.  A mango-infused ceviche from HEB! And the best part? Ready to serve in 15 minutes!
